Pancake Day is this week! 13th Feb 2024. If you're a fan of thick fluffy pancakes then this recipe is for you.

Mix the self raising flour, baking powder, sugar and a pinch of salt together in a large bowl.
Create a well in the centre with the back of your spoon and then add your eggs, butter and milk.
Whisk together until smooth.
Heat a small knob of butter in a non-stick pan. When the butter looks frothy add a ladle of batter in to the centre (depending on how large you want them depends on how much batter you add and how many you can fit in the pan). Cook the pancake for 1-2 minutes or until tiny bubbles appear and pop on the surface. Flip the pancakes over and cook for a further minute. Repeat until batter is all used.
Served stacked with whichever topping chosen and enjoy!
